Easy Healthy Borscht

Our Fully Functional® Healthy Borscht recipe is great to make when you are feeling under the weather. Red cabbage is packed with vitamin C and can help reduce inflammation. Beets are high in fiber, are high in antioxidants, help with detoxification and also help reduce inflammation.

Raw, unfiltered apple cider vinegar can be used as a natural cold remedy since apple cider vinegar contains beneficial bacteria that can help give your immune system a quick boost.

This soup is traditional to Eastern Europe such as Ukraine and Poland. It is usually served cold with sour cream. Instead, we suggest topping with coconut yogurt and some fresh mint or eat it as is. It is delicious either way and tastes great whether served hot or cold.

Ingredients

  • 1 can organic tomatoes or 2 large, fresh organic tomatoes chopped (omit if avoiding nightshades)
  • 1 large head of red cabbage chopped or shredded
  • 7 medium beets peeled and chopped
  • 4 cups vegetable or chicken broth
  • 1/4 cup raw, unfiltered apple cider vinegar
  • ½-1 tbsp honey optional

Instructions

  1. Place tomatoes into a large soup pot and heat until starting to boil, mashing with a spoon until somewhat smooth.
  2. Pour the chicken broth into the pot and add the beets. Bring to a boil and cook for 5-10 minutes.
  3. Add the cabbage and cook until both the beets and cabbage are soft. Add the apple cider vinegar and honey (if using.)
  4. Optional step: Blend in a blender such as Vitamix for a smooth borscht.
  5. Top with mint or coconut yogurt if desired and serve hot or cold.
