Roasted Broccoli with Lemon Basil Dressing

Ingredients

Broccoli

  • 2 heads broccoli chopped
  • 2 tablespoons extra-virgin olive oil
  • Sea salt to taste
  • Ground pepper to taste

Lemon-Basil Dressing

  • 4 tablespoons fresh basil finely chopped
  • 4 tablespoons lemon juice
  • 4 tablespoons extra-virgin olive oil
  • 2 clove garlic minced
  • 1 teaspoon sea salts
  • Ground pepper to taste

Instructions

BROCCOLI

  1. Preheat your oven at 350°F.
  2. Add chopped broccoli to a rimmed baking sheet. Lightly massage the broccoli with olive oil. Add sea salt and pepper.
  3. Bake for 10 minutes. Remove from the oven and give it a good stir. Bake for another 8 to 10 minutes. Remove from the oven and drizzle with lemon basil dressing.

LEMON BASIL DRESSING

  1. Add salad dressing ingredients to a glass jar with a lid for easy storage (Mason jars work well). Close the jar and shake vigorously until well mixed.
  2. Enjoy!
