Clean Chicken Salad With Kale

Perfect for picnics, lunch, or a quick easy dinner! This chicken kale salad recipe gets a major nutrient boost thanks to the green goodness of kale, and celery. Plus, it’s mayonnaise-free! Delicious as a salad or try in a lettuce (or kale!) wrap.

Kale is loaded with antioxidants and vitamin c , it really is a superfood!

Pairs well with our Sweet Potato Toast 2-Ways , and/or Garlic and Chive Flatbread .

Ingredients

  • 1 lb chicken breast baked or poached
  • 4 stalks celery divided
  • 1 cup grapes*
  • 8 cups skale leaves finely sliced into ribbons
  • 2/3 cup slivered almonds
  • 1/4 cup dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1 lemon juiced
  • sea salt & black pepper to taste

Instructions

  1. Shred the cooked chicken breasts using two forks and place in a bowl.
  2. Add celery, grapes, slivered almonds and kale.
  3. In a separate small bowl, combine mustard, lemon juice and olive oil. Stir well.
  4. Add dressing to the bowl and toss well to coat. Season with salt and pepper.
  5. Enjoy!

Notes

*1 cup chopped apple would be a good substitution, if needed
