Breakfast in the Antoine household can be crazy trying to feed five hungry children. Here’s a favorite weekend special. Paleo Pancakes With Plantains! Enjoy this simple and delicious, egg-free, grain-free, nut-free, sweetener-free, dairy-free, vegan, ‘paleo-licious’ pancake recipe! 

Serve them stacked up with your favorite berries, filled with nut butter, or drizzle some organic maple syrup on them. We recommend doubling this recipe if you have more than two mouths to feed. Everyone will want seconds!

Ingredients

  • 4 whole Plantains ripe
  • 1/2 tsp Baking soda
  • 1/4-1/2 whole Cinnamon to taste
  • 2 tbsp Coconut oil may need to add more-consistency should be like traditional pancake batter
  • Pinch Sea Salt
  • 1 tsp apple cider vinegar
  • 1/4-1/2 tsp Vanilla

Instructions

  1. Mash plantains in a mixing bowl (the same way you would mash bananas for banana bread), add in baking soda, cinnamon, coconut oil, sea salt, cider vinegar, and vanilla. Mix until combined.
  2. Heat pan or griddle on medium to low heat. Once pan/griddle is ready, scoop out ¼ cup of batter and pour onto on pan/griddle, and allow to cook until bubbles start to form (about 4-5 mins). Flip, and cook otherside. Repeat until you’ve used all your batter.
  3. Top with fresh berries, nut butter, slivered almonds, or organic maple syrup.
  4. Enjoy!
