This Cauliflower With Turmeric is a delicious and flavorful recipe featuring the anti-inflammatory spice turmeric and creamy coconut milk for a quick and healthy side dish. You may want to double this recipe, it’s flavors deepen overnight, and make for a super tasty lunch the next day.

We’ve all heard about the therapeutic benefits of turmeric, or curcumin for pain and inflammation, but you may not know that turmeric is fantastic to cook with! It adds a depth of flavor, and color, that creates a feast for the eyes and belly.

One of our favorite quick recipes, and healthy sides. Featuring anti-inflammatory spices of turmeric and black pepper, simmered in coconut milk until creamy and golden. So good!

Ingredients

  • 1 can coconut milk
  • 1 teaspoon turmeric
  • 1 teaspoon sea salt
  • 1 teaspoon fresh ground pepper
  • 1 head cauliflower chopped into florets
  • 1/4 cup cilantro chopped

Instructions

  1. Heat a skillet over medium heat and add the coconut milk, turmeric, salt and black pepper.
  2. Whisk together and let simmer on low.
  3. Once bubbles start to appear in the sauce, add the cauliflower florets and cook covered with a lid for 15 to 20 minutes, or until your desired consistency is reached.
  4. Top with cilantro to serve.
