Ginger-Lime Vinaigrette

Our Ginger-Lime Vinaigrette is sweet, tangy, and salty. Great on salads, roasted veggies, and makes an amazing marinade for protein (salmon, chicken, turkey). It’s a beautiful, flavorful combination of anti-inflammatory veggies (and herbs if you decide to add cilantro, which we highly recommend!).

Notes on two affordable Kitchen Helpers: Two of the less expensive but extremely useful items in my pantry are the Microplane and the Immersion Blender Stick. An Immersion blender is a hand-held device, essentially a stick with simple controls and a blade end. This beauty can puree that pot of curried squash or pumpkin bisque into velvety goodness, as well as make lovely salad dressings and even mayonnaise.

Microplane is the brand name for some amazing graters, slicers, and zesters. I highly recommend the hand-held grater that looks somewhat like a rasp. It makes short work of citrus zest, ginger, and garlic, to mention a few. In the following recipes, the Microplane is used for grating garlic and ginger in this recipe.

Ginger-Lime Vinaigrette ingredients

Ingredients

  • 1/4 cup lime juice freshly squeeze
  • 2 tbsp maple syrup raw honey or equivalent to stevia to taste
  • 2 Inches ginger fresh, peeled and grated using a micro-plane
  • 2 cloves garlic grated using a micro-plane
  • 2 tbsp coconut aminos or to taste
  • 3/4 cup extra-virgin olive oil or other neutral oil
  • 1 pinch sea salt

Instructions

  1. Place lime juice in a glass quart jar with screw cap.
  2. Add sweetener and swirl, shake or whisk to combine.
  3. Add ginger, coconut aminos and olive oil to jar, whiz using immersion blender.
  4. Season to taste, add minced cilantro if desired.
  5. Enjoy!
