Sweet potatoes are certainly a staple at any holiday table. Unfortunately, the norm for sweet potato dishes is to sweeten them up with marshmallows and lots of sugar. This recipe uses fresh ingredients and sweetens things up with coconut milk and pecans. You can now indulge without the guilt! This recipe is free of gluten, dairy and soy.

Ingredients

  • 4-5 large sweet potatoes organic, or yams
  • 1/2 can coconut milk full-fat organic
  • 1-1.5 tbsp pumpkin pie spice
  • 1.5 cups pecans halves or pieces
  • 3/4 cups coconut flaked
  • 3-4 tbsp coconut oil or ghee
  • 1 pinch sea salt

Instructions

  1. Preheat oven to 375°F
  2. Wash and slice sweet potatoes (about 1/2 inch thick), and place in 9x13in baking dish.
  3. In a bowl combine coconut milk with pumpkin pie spice, coconut oil (or ghee), and sea salt, stir together. Pour over sliced sweet potatoes.
  4. Sprinkle with pecans and coconut flakes.
  5. Bake for 1 hour, or until soft and golden brown.
  6. Let cool, and enjoy!
