This Mediterranean Zucchini Salad is a simple side dish celebrating the flavors of the Mediterranean. With olive oil, lemon, kalamata olives, and fresh herbs. Combined with fresh garden vegetables, this salad is a taste of summer!

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic minced
  • 2 medium zucchini sliced
  • 1 cup cherry or grape tomatoes halved
  • 1/4 fresh parsely chopped
  • 1/4 kalamata olives pitted and chopped
  • Sea salt
  • Fresh ground pepper

Instructions

  1. In your serving bowl, whisk together the olive oil, lemon juice, garlic, sea salt and pepper.
  2. Add the vegetables and herbs to the bowl and toss to coat with the dressing.
