This Sun-Dried Tomato Vinaigrette is definitely one to save with your other fave anti-inflammatory diet recipes, and it’s one of our absolute favorite anti-inflammatory salad dressing recipes. Sun-dried tomatoes always elevate a dish and add a rich, hearty, complex depth of flavor that makes you feel like you’re eating something naughty.

Notes on two affordable Kitchen Helpers: Two of the less expensive but extremely useful items in my pantry are the Microplane and the Immersion Blender Stick.

An Immersion blender is a hand-held device, essentially a stick with simple controls and a blade end. This beauty can puree that pot of curried squash or pumpkin bisque into velvety goodness, as well as make lovely salad dressings and even mayonnaise. Use a quart jar to mix up the Sun-dried tomato vinaigrette in short order. Microplane is the brand name for some amazing graters, slicers, and zesters.

Ingredients

  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp sun-dried tomatoes in oil heaping
  • 1 pinch basil fresh, chopped, to taste
  • 2 cloves garlic grated using a micro-plane
  • 3/4 cup extra-virgin olive oil organic

Instructions

  1. Place all ingredients in a glass quart canning jar and whiz using the immersion blender.
  2. Enjoy!
