Ingredients

Filling

  • 1 pound of ground lamb, bison, beef or turkey ground
  • 1 onion chopped
  • 2 medium carrots diced
  • 4 garlic cloves minced
  • 1 cup frozen peas
  • 1/4 cup tomato paste
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 tsp thyme
  • sea salt and black pepper to taste
  • 1/4 cup chicken broth

Sweet Potato Topping

  • 2 medium/large sweet potatoes cut into 1 inch cubes (no need to peel them)
  • 1 tbsp olive or avocado oil
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • sea salt to taste

Instructions

  1. In a medium skillet (cast iron skillet is recommended if you have one) over medium-high heat, saute the ground lamb (or beef, bison, turkey), onion, chopped carrots, and garlic. Continue cooking until the meat is cooked through and carrots are soft, about 12-15 minutes. (Begin making the sweet potato topping while the filling cooks) Once the carrots are soft, add the peas, stir in tomato paste, chili powder, paprika, thyme, salt, black pepper, and chicken broth.
  2. To make the mashed sweet potatoes: Place the cubed sweet potatoes in a large saucepan and add enough water to cover by about 1". Add 1/2 teaspoon of salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender, about 9 to 12 minutes. Drain well, then return the potatoes to the pot. Add the olive or avocado oil, chili powder, paprika and sea salt. Mash the sweet potatoes to your desired consistency. Alternatively, you can add all ingredients to a mixing bowl and use a mixer to mash them.
  3. Top the meat filling with the sweet potato mash. If you’re not using an oven safe cast-iron skillet, transfer the meat filling to a casserole dish or baking dish and top the meat filling with the sweet potato mash. Sprinkle the top with additional paprika and thyme. Bake for 15 minutes. Remove from the oven and serve.
  4. Enjoy!
