Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 whole onion chopped
  • 3 cloves garlic minced
  • 1 whole small zucchini chopped
  • 1 whole small summer squash chopped
  • 1 cup red bell pepper chopped
  • 1 cup tomato chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dry basil
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flake (optional/to taste)

Instructions

  1. Heat olive oil over medium heat in large sauté pan. Add onion and sauté until it begins to soften.
  2. Add ground turkey and sauté until cooked through. Add remaining vegetables, garlic and spices.
  3. Sauté until all vegetables are cooked to your liking. Add more seasoning to taste and serve!
