Ingredients

  • 2 tablespoons Coconut oil
  • 8 oz chopped mushrooms optional
  • 1 pound ground turkey or chicken
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons Chinese 5 spice powder
  • 2 teaspoons sesame oil
  • 4 cups shredded cabbage or slaw mix
  • 2 cups shredded carrots
  • 1/3 cup coconut aminos can sub gluten free tamari, but use less
  • 4 cups spiralized zucchini noodles
  • 1 lime juiced
  • Sea salt and freshly ground pepper to taste
  • 2 green onions thinly sliced (garnish)
  • Sesame seeds (garnish)

Instructions

  1. In a large skillet, heat 2 tablespoons coconut oil over medium-high heat.
  2. Add the mushrooms and cook until soft, about 5 minutes.
  3. Add the ground turkey or chicken and cook until browned, about 5 minutes, stirring occasionally.
  4. Add the ginger, Chinese 5 spice and sesame oil. Combine and cook until fragrant, about 1 minute.
  5. Reduce the heat slightly and add the ginger, cabbage or slaw mix, carrots, and coconut aminos, stirring to combine. Cook, stirring frequently, until the cabbage begins to wilt, about 3-5 minutes.
  6. Add the zucchini noodles, stirring until warmed through.
  7. Add the lime juice, and season with sea salt and freshly ground pepper to taste.
  8. Top with green onion and sesame seeds, and serve.
  9. Enjoy!
