This French Salad recipe is an anti-inflammatory diet delight. It’s fresh, crunchy, light, and delicious. And most importantly, EASY to make!

Crisp, refreshing, zesty ingredients make this a complimentary side to bold main dishes. Perfect palate pleaser. Plus, did we mention the anti-inflammatory veggies?

This light salad goes great with our Tasty Lentil Soup.

Ingredients

  • 6 carrots
  • 4 radishes (optional)
  • 1 fennel bulb
  • 1 tsp toasted fennel seeds or cumin seeds
  • 1 tsp grainy mustard
  • 3 tbsp organic lemon juice
  • 1/4 cup olive oil
  • fresh parsley to top (optional)

Instructions

  1. To toast the seeds: simply place them in a skillet and heat to medium-high. Constantly stir them around the pan until they are lightly browned.
  2. Place the carrots, radishes (if using), and fennel bulb into a food processor or grate by hand. Place into large bowl and combine.
  3. Combine the grainy mustard, lemon juice, olive oil and honey in a small container or bowl and mix thoroughly. Mix in seeds.
  4. Top with fresh parsley if desired.
  5. Enjoy!
