Grain-Free Stuffing

The holidays are here, and we can’t imagine celebrating without stuffing! When you are grain-free and dairy-free it’s sometimes difficult to find a substitute for your favorite parts of the meal. This Grain-Free Stuffing will not disappoint. It is hearty, savory, and delicious.

Note: Prep chia seeds before starting the recipe. Double or triple the recipe as needed.

Ingredients

  • 3.5 cups onion diced
  • 2.5 cups celery diced
  • 1/4 cup cranberries or cherries, dried, chopped
  • 2 cups almond flour
  • 1 tbsp sage chopped
  • 1 tbsp thyme chopped
  • 2 tsp marjoram chopped
  • 2 tbsp flat leaf parsley chopped
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 2 tbsp ghee or coconut oil
  • 3 tbsp chia seeds soaked in 9 tbsp warm water for 15-20 minutes

Instructions

  1. Preheat oven to 350˚F.
  2. Saute onion, celery, cranberries (or cherries) sage, thyme, marjoram, parsley, salt and pepper, in 1 tablespoon of ghee or coconut oil until celery and onions are soft. About 6-7 mins.
  3. In a bowl, add almond flour, soaked chia seeds, and remaining tablespoon of ghee or coconut oil, then add in your sauteed ingredients, and stir.
  4. Bake 45 mins – 1 hour.
  5. Let cool, and enjoy!
