Greek Style Zucchini-Lamb Burgers

Skip the fries and ramp up your veggie intake! These burgers go better with a simple Greek salad combo of lettuce, cucumbers, tomatoes, red onions, and Kalamata olives! Perfect for a simple, quick healthy meal.

Ingredients

  • 1 lb grass-fed ground lamb
  • 1 small zucchini grated
  • 1 large clove garlic minced
  • 2 teaspoons lemon zest
  • 1/2 teaspoon dried oregano
  • 1/4 cup fresh parsley chopped
  • 1/2 teaspoon sea salts
  • 1/2 teaspoon black pepper

Instructions

  1. Grate the zucchini, then squeeze all liquid out with a paper towel. Add to a large bowl. Add ground lamb, garlic, lemon zest, oregano, parsley, sea salt and pepper.
  2. Using your hands, mix all ingredients together until thoroughly combined. Form into 4 equal patties.
  3. Cook patties on stove-top grill pan or outdoor grill over medium heat. Cook until done in the center, about 5 minutes per side.
  4. Enjoy!
