You won’t believe how quick and easy this ground beef and kale skillet dish is! This simple recipe is a nutritious one-pot meal bursting with flavor, and sure to become a family favorite. One of our tastiest anti-inflammatory diet recipes.

Ingredients

  • 1/4 cup coconut aminos
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger peeled and grated/minced
  • 2 green onions chopped
  • 1 pound ground beef
  • 6 cups kale chopped
  • Cauliflower rice or rice for serving

Instructions

  1. In a small mixing bowl combine the coconut aminos, garlic, ginger and green onion. Set aside.
  2. Heat a large skillet over medium-high heat.
  3. Add the beef to the pan, breaking it up with a wooden spoon as it cooks.
  4. Once it is cooked through and no longer pink, transfer the cooked beef to a bowl and set aside. Drain any excess drippings from the pan.
  5. To the same pan add the kale leaves and cook until wilted and tender.
  6. Add the cooked beef back to the pan with the kale and season with the salt. Add the coconut aminos sauce and stir to combine.
  7. Let the sauce bubble and thicken for 1 to 2 minutes. Remove the pan from heat and divide between plates.
  8. Serve with rice or cauliflower rice if desired. Enjoy!
