Ingredients

  • 6 whole chicken breasts organic
  • 1 Small jar of roasted garlic minced
  • 6 whole lemons juiced
  • 1 pinch salt and pepper
  • 1 cup capers
  • 4 whole eggs
  • 1 cup white wine sulfite-free organic
  • 1 cup matzo ball mix This is our secret! Streit’s Gluten-Free Matzo Ball Mix

Instructions

  1. Heat grape seed oil in an electric griddle or over medium heat.
  2. Dip chicken in beaten eggs and coat liberally.
  3. Dredge breast in Matzo ball mix until well coated.
  4. Place coated breast in oil and cook until golden brown (about 2 minutes). Salt and pepper each breast as you prefer. Repeat with other breasts.
  5. Flip breasts and brown on the other side for another 2 minutes.
  6. Now add capers and pour 2-3 tablespoon s of lemon juice over and around each breast. Turn and continue to brown for another 2 minutes.
  7. Add 2 tablespoon s over and around each breast as they cook for another minute (be sure to flip).
  8. When breasts are 160 degrees inside (use a meat thermometer), they can be pulled off the heat. We usually place them in a roasting dish and pour the remaining pan drippings over the breasts. The pan can then be cleaned for the next batch if needed.
  9. Enjoy!
