Ingredients

  • 1 organic spaghetti squash, cooked
  • 1/2-1 tsp Sea Salt to taste
  • 1/2 tsp pepper
  • 2 tbsp Italian seasoning
  • 2 cloves garlic
  • 1/2 cup organic sun-dried tomatoes, mushrooms, artichoke hearts, olives, hearts of palm, zucchini use all or only a selection. You can increase the amount if you like one item and leave others out. It’s up to you!
  • 1/4 cup pine nuts
  • 2 cooked boneless, skinless chicken breasts OR 2 cooked servings of chopped nitrate free, pork free sausage of your choice
  • 1/4 cup olive oil

Instructions

  1. To cook the spaghetti squash: Preheat oven to 400. Make stabs into the spaghetti squash and cook for 3 minutes on high in your microwave to soften it for cutting.
  2. Once it is cooled enough, cut the spaghetti squash in half lengthwise using a large knife. Scoop out the seeds like you would a pumpkin.
  3. Drizzle the halves with olive oil, place cut side down on a baking sheet until you can poke it easily with a fork. Remove from oven and let it cool.
  4. Once it is cool enough to be handled, you can scrape the insides with a fork to shred the squash into “spaghetti.” This can be done a day ahead. You may also find crock pot or microwave recipes for cooking spaghetti squash online.
  5. Heat a wok or a fry pan to low-medium heat. Add the pine nuts, stirring constantly until toasted lightly.
  6. Remove the pine nuts and place them to the side.
  7. Add the olive oil to the pan. If using zucchini or mushrooms, cook them to your liking. Then add the other vegetable ingredients. Add sea salt, pepper, Italian seasonings and garlic and cook just for a few minutes (be careful not to burn the garlic.)
  8. Add the chicken or sausage next. Finally, add the spaghetti squash and stir completely to incorporate all ingredients.
  9. Add more spices, salt, pepper, or olive oil as desired. Top with pine nuts.
