This anti-inflammatory diet Detox Tabbouleh Salad recipe is a delicious take on traditional tabbouleh that is raw, grain-free, and full of nutrients! Bursting with fresh flavors, these superfood ingredients also support detoxification in the body. If you haven’t yet tried cauliflower rice, this versatile vegetable is a staple of the grain-free diet!

If you don’t have a food processor, you can also use a box grater to “grate” the cauliflower into rice. Many stores also sell “riced” cauliflower so you can skip a step, using a prepared option.

Ingredients

  • 1 medium head cauliflower cored and chopped into florets
  • 1 daikon radish chopped (optional)
  • 3 cups parsley finely chopped
  • 2 cups tomatoes flesh and seeds removed, finely chopped
  • 1 English cucumber seeded and finely chopped
  • 1 bunch scallions thinly sliced
  • 2 cloves garlic minced
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 teaspoons sea salt
  • 1 teaspoon fresh ground black pepper

Instructions

  1. In a food processor, add cauliflower florets and chopped daikon radish. Pulse until you have a rice-like texture. (You may need to do this in batches to avoid overcrowding your food processor.)
  2. Add the riced cauliflower and daikon radish to a large bowl. Add all other remaining ingredients and mix well.
  3. Add more lemon or seasoning to taste.
