Immune Boosting Chicken Soup

There’s no better time than flu season to make this healing, immune-boosting chicken zoodle soup! Packed with nutrient-dense veggies and plenty of immune-boosting ingredients such as turmeric, lemon, onion, garlic, and bone broth, to help you fight, or fight off, winter colds and flu naturally! Traditional noodles are replaced with “zoodles” to keep this recipe grain-free while adding nutrition, but it’s just as warm, comforting, and delicious!

Ingredients

  • 1 pound chicken breast cooked, shredded
  • 2 tablespoons avocado or olive oil
  • 1 onion diced
  • 6 carrots sliced
  • 4 stalks celery sliced
  • 4 cloves garlic
  • 2 bay leaves
  • 2 teaspoons thyme
  • 1 teaspoon turmeric
  • 8 cups chicken bone broth
  • 2 medium zucchini spiralized
  • zest and juice of one lemon
  • 1/2 cup fresh parsley chopped
  • sea salt
  • pepper

Instructions

  1. To cook chicken: Bring a small pot of water to boil. Add chicken breasts. Poach until chicken is cooked through. Let cool, then shred chicken. While chicken is poaching, make the soup.
  2. To make the soup: In a large soup pot, heat avocado or olive oil over medium heat. Add onion and saute for about 5 minutes until softened.
  3. Add carrots and celery and sauté for another 5 minutes.
  4. Add garlic and sauté 1 minute
  5. Add bay leaves, thyme, and turmeric and sauté 30 seconds before adding chicken broth.
  6. When the soup begins to simmer, add the zucchini noodles and shredded chicken and cook until zucchini is heated through, about 2-3 minutes.
  7. Turn off heat and remove bay leaves. Add lemon zest, juice and parsley. Season with sea salt and pepper.
