Zucchini Noodles With Chicken and Broccoli

Zucchini Noodles With Chicken and Broccoli

Ingredients

  • 1 1/2 lbs chicken breasts organic, cut into small cubes
  • 2 heads broccoli cleaned and chopped into small pieces
  • 1 tbsp minced garlic in water organic
  • 1/2-1 cup chicken broth organic, from a carton or homemade
  • 2 large zucchini organic
  • 1 tbsp olive oil or avocado oil
  • Himalayan sea salt to taste
  • 1 tsp Italian seasoning organic
  • Black pepper to taste
  • 1/4 cup pine nuts (optional)
  • crushed red pepper (optional)

Instructions

  1. Using a spiralizer, make zucchini noodles. Alternatively, you can create zucchini noodles using a vegetable peeler. Run the peeler lengthwise down the zucchini to create “ribbons”. Stack the ribbons on top of each other and slice into long skinny “noodles” with a knife. Set aside.
  2. Heat olive oil in large skillet over medium heat. Add chicken, sea salt, pepper and saute for 3-4 minutes. Add broccoli, Italian seasoning and garlic. Saute for 5 minutes. Add chicken broth and let simmer until the chicken is cooked through and the broccoli is tender. Add zucchini noodles at the end of the cooking time, just until heated through. Top with pine nuts or crushed red pepper if desired.
  3. Enjoy!
