It’s the perfect way to use up leftover roasted vegetables of any kind . Serve over warmed greens and top with a delicious, creamy hemp seed dressing which adds both protein and healthy fats!

Ingredients

For the Veggies

  • 2 cups Spinach wilted
  • 2 cups leftover roasted winter veggies

For the Dressing

  • 1/2 cup hulled hemp seeds
  • juice from one lemon
  • 1/4 cup Filtered water
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • Sea Salt to taste
  • Fresh ground pepper to taste

Instructions

For Spinach and Winter Veggies

  1. Heat skillet on high, when hot add a tablespoon of olive oil, and spinach.
  2. Sauté for 3-4 mins on both sides until golden brown.
  3. Add your winter veggies, and Sauté for another 3-4 mins just until warm.

For Creamy Hemp Dressing

  1. Add all ingredients to a blender and blend on high for 20-30 seconds. If you don't have a blender, add ingredients to a bowl, and whisk briskly for about 3 mins, until all ingredients are well incorporated, and dressing looks creamy.
