This nourishing roasted veggie bowl with seasonal winter vegetables is the healthiest kind of comfort food!

It’s the perfect way to use up leftover roasted vegetables of any kind. Serve over warmed greens and top with a delicious, creamy hemp seed dressing which adds both protein and healthy fats!

Ingredients

For the Veggies

  • 2 cups spinach wilted
  • 2 cups leftover roasted winter veggies

For the Dressing

  • 1/2 cup hulled hemp seeds
  • Juice from one lemon
  • 1/4 cup filtered water
  • 1 tablespoon olive oil
  • 1 teaspoon dijon mustard
  • 1 clove garlic
  • Sea salt to taste
  • Fresh ground pepper to taste

Instructions

For Spinach and Winter Veggies

  1. Heat skillet on high, when hot add a tablespoon of olive oil, and spinach.
  2. Sauté for 3-4 mins on both sides until golden brown.
  3. Add your winter veggies, and sauté for another 3-4 mins just until warm.

For Creamy Hemp Dressing

  1. Add all ingredients to a blender and blend on high for 20-30 seconds. If you don't have a blender, add ingredients to a bowl, and whisk briskly for about 3 mins, until all ingredients are well incorporated, and dressing looks creamy.
